Hello everyone! It’s Thursday, and the weekend is SO close! Today was another 50 degree and sunny day, which, if you ask me, was a pretty fantastic way to end the month. The warmer weather this week, Daylight Savings being next weekend, and the fact that spring break is exactly three weeks away has me already looking forward to
Since we are obviously not there yet though, I thought why not bring a little taste of summer to me? Well, it worked. It worked so well, I had to share this morning’s Summer Berry Oats with you this afternoon.
While I choose blueberries and strawberries as my summer berries of choice, make the recipe your own! You may want to use raspberries, blackberries, or even cherries.
In the mix:
- 1/2 cup gluten-free, steel-cut oats
- 1 cup unsweetened vanilla almond milk (although any milk of choice should work)
- 1 cup of fresh, sliced strawberries
- 1/2 cup fresh blueberries
- 1 Tablespoon milled flax seed (optional)
- 1/2 teaspoon pure vanilla extract
- A sprinkling of cinnamon
*Other toppings you may enjoy include natural almond butter, chopped walnuts, chopped pecans, sliced almonds, etc. :)
These oats were nutritious, delicious, and satisfying! The warm, plump blueberries combined with the sweet strawberries and creamy oats brought me right to the summer months, and the volume and fiber the berries added, made it a filling, healthy, and hearty bowl!
A mug of cranberry pomegranate tea completed my balanced breakfast. Time for a workout!
