Hey there everyone, and welcome to February’s first What I Ate Wednesday! First and foremost, thank you for all of the wonderful birthday wishes yesterday! 29 could not be off to a better start, and I am really looking forward to what is to come!
Yesterday was filled with fabulous company, good food, and no camera
so today’s WIAW, we’ll be taking a look into Monday’s eats. Our wonderful host Jenn, over at Peas and Crayons decided that this month will be a month of Veggie Love! Heart-shaped vegetables vs. heart-shaped chocolate if you will.
Breakfast
Mango sprinkled with cinnamon
A steaming mug of cinnamon vanilla tea
Lunch
Broccoli florets sauteed in garlic, Italian seasoning, and EVOO and topped with cannellini beans seasoned with a few crushed red pepper flakes
Snack #1
Baby carrots dipped in roasted garlic hummus with a hot mug of green tea with lemon
Dinner
A large salad beginning with a bed of romaine and topped with celery, carrots, Spanish and black olives, hearts of palm, and chopped, raw walnuts and dressed with balsamic vinegar and a little EVOO
Snack #2
Banana sprinkled with cinnamon and topped with natural almond butter
