Happy Wednesday friends! How are you mid work week? While yesterday was not the best day at all, today, for one reason or another has been pretty fantastic. I still had lots of work at school, but got quite a bit done, although I still not get too much sleep last night, for some reason today I’ve been pretty full of energy and productive (I’m not questioning it, and knock on wood it continues!) and even though I woke up to an icy mix this morning, it seems that things have calmed down out there.
Today is also pretty fantastic, because today we hit the double digits in our What I Ate Wednesdays! It’s the little things to us bloggers.
As always, before we get into yesterday’s eats, I want to thank our lovely host Jenn over at Peas and Crayons for organizing this WIAW weekly link-up!
Breakfast
A hot mug of cinnamon vanilla tea
Lunch
Broccoli and cauliflower florets sauteed in garlic, Italian seasoning, and EVOO and topped with black beans seasoned with cilantro
Snack #1
Baby carrots dipped in roasted garlic hummus
Dinner
Roasted eggplant topped with homemade marinara and fresh basil along with a mixture of brown and wild rice
Snack #2
Granny Smith apple sprinkled with cinnamon and topped with natural almond butter

Your dinner looks fantastic! I think I OD’ed on eggplant after living abroad for a year & might be ready to introduce it again. I could put marinara on everything. Not much of a rice fan, if I had to choose I’d say wild, I like the variety. Enjoy the afternoon!

Just a thought, but it could be the weather? Another blogger posted the other day that broccoli is not going to be in her store for a while, because of weather conditions!

Those and the Brownie Batter Oats are my go-to breakfasts in the morning! You can’t beat healthy and comforting.

i saw your dinner on heather’s #jadorelavie post today and drooled all over my keyboard i sweat! that lunch looks amazing too, i LOVE black beans. i have them in my lunch salad as protein almost every day!!!

LOL That’s how I feel every time I see pictures of all the amazing places you go! I think black beans with avocado and tomatoes are one of my favorite, simple combos!
