Hello everyone, and Happy Saturday! It’s still quite chilly here in New Jersey, but for the first time in a few days the sun in finally shining!
Being it Saturday, Morgan and I slept in a little later this morning, and when we woke up, I was ready for breakfast. Now it should be no surprise to you that I was craving something sweet and healthy, so I went through some of the options. I wasn’t in the mood for oatmeal this morning, so that knocked out my Banana Bread Oats, Brownie Batter Oats, and Choconana Oats. I don’t have an empty jar of nut butter (yet) so that knocked out my OIAJ, and I wasn’t really in the mood for one of my many yogurt bowls. I was in the mood for yogurt though – just in a different form.
How does a Breakfast Banana Split sound to you?? Good? Great? I thought so.
I started by taking one banana and splitting in half, length-wise.
The “ice cream”:
- 1, 6 oz. container of low-fat, plain, Greek yogurt (I used Chobani 2%)
- 1 Tablespoon milled flax seed (optional)
- 1 1/2 Tablespoons Hershey’s Unsweetened Special Dark Cocoa (100% Cacao)
- 1 packet of Stevia
*For other, “ice cream,” flavors, feel free to substitute vanilla Greek yogurt or a fruit flavored Greek yogurt such as strawberry or pineapple.
Topped with:
- A sprinkling of chopped walnuts
*Other toppings you may enjoy include chopped pecans, slivered almonds, shredded coconut, fresh blueberries, fresh blackberries, sliced strawberries, fresh raspberries, dark chocolate chips, etc.
This banana split was dessert for breakfast – smooth, creamy, nutritious, and packed with protein.
This would also make a fantastic breakfast, snack, or dessert for children too! Those with young kids, you can set up a, “create your own sundae,” for them and their friends too! Just split the bananas in half for the kids, let them pick their favorite Greek yogurt flavor, and then set up a toppings bar! Delicious, satisfying, and flavorful, they would have so much fun and not even realize they are eating something good for them.
Along with a mug of green tea, it was an excellent balance of complex carbs, protein, and healthy fats, to keep me full and energized the entire morning.
Time for a sweat session.
